Just a Bit Anxious

The warmer days of spring and summer are right around the corner!  For me, one of the perks of the warmer days ahead is being able to break out my Vitamix and make a delicious smoothie.  They are perfect for breakfast or as a post-recovery treat after a long run. Actually, they are perfect just about anytime!

Now, the kitchen certainly is not where I enjoy spending my time (due to the fact that Matt is the chef of the house), but I can successfully whip up a smoothie.  So, today I would like to share this delicious and nutritious treat with you!

Without further adieu, here is what you need to do to create this warm weather treat.

  • a blender-I have a Vitamix 🙂
  • measuring spoons
  • measuring cups

  • vanilla almond milk – 1 to 2 cups
  • chocolate cocoa powder – 1 tbsp.
  • Wyman’s frozen blueberries – 1 cup
  • Bob’s Red Mill flaxseed meal (or chia seeds) – 2 tbsp.
  • honey – 1 tbsp.
  • ripe avocado – 1/4 of the avocado
  • vanilla – 1 tsp. (optional)

Blend until a nice consistency.  Add more liquid if necessary.

Welcome March!

Week #4 of my training for the Nike Woman’s Marathon Half in DC is now complete.  Overall, I had a very successful week.  I was able to get in three sessions of strength training and all four of my training runs.  Two of the runs were on the treadmill, but the other two were outside.  Here are the stats for my outside runs:

The cold temperatures for my seven miler were killing me, but I knew I couldn’t complete seven miles on the dreadmill treadmill…so outside I went.  By the completion of mile #1, believe it or not, I was completely warmed up!  Needless to say, I was quite pleased with both of my outside runs this weekend. 🙂

While I am running I am always thinking about how I am going to reward myself for my efforts, and today I decided my reward would be a smoothie made in the Vitamix.

I never measure any of the ingredients when I make a smoothie, but I can share the ingredients:

Wyman’s frozen blueberries

a whole cored pear with skin

Bob’s Red Mill flaxseed meal

Chobani vanilla yogurt

Orange juice

It was the perfect treat after an intense week of working out!

In the Kitchen with Amy

When I visit my grandmother we like to watch a show on QVC called  In the Kitchen with David.  My daughter has even caught me watching it at home and she subtly reminds me that I am too young to be watching such a channel.  She’s so sweet, but she’s right!  Anyway, one of the products that the darling host David repeatedly promotes is the Vitamix.  Topple that with the fact that my friend Holly owns a Vitamix and loves it; well, I thought it would be perfect for me, the kitchen lovin’ girl that I am.

If you were to talk to me about the kitchen, you would find out that there are a few gazillion reasons why I love abhor cooking, but I can honestly say that the Vitamix is working on repairing that relationship.  I am proud to say that I have successfully mastered one recipe, and that my dear friends is Simple Tomato Soup. I am all about “keeping it simple” and “less is more” so this makes the mark!  The recipe is straight from the official Vitamix Simply Fresh cookbook.

Here are the ingredients from the Simply Fresh cookbook:

  • 2 cans of diced tomatoes
  • 1/2 small onion
  • 1 small stalk of celery
  • Dash of hot sauce
  • 1/2 cup of half and half
  • salt & pepper to taste

It’s oh so easy, and it’s oh so yummy!  There is no chopping, dicing, or sauteing.  You just throw everything in the Vita, and voila, you have the perfect soup!  What’s even more amazing is that the soup is pipin’ hot when you pour it out of the Vitamix. It makes a tasty addition to my healthy lunch.

I’ll eventually attempt to make different soup recipes and I’ll be happy to share my kitchen success!  Thank you, Vitamix, for making my kitchen experience a positive one!
